Kale and Mushroom fried rice

This week has been a very hectic one, in more ways than I can imagine. And when that happens one feels that time just slips away from your hands like sand. You make promises to yourself to strike a balance in your life and even endeavor towards achieving that goal setup by yourself. However, life always has other plans for us and often before we know it we are back to square one.

And unwinding also means that I don’t cook an elaborate meal  which will take considerable time in the kitchen. Even though cooking for me is therapeutic, there are days when I just don’t want to do it, and today was that day.

1-IMG_8173Thankfully I had  some leftover Rice & Mushrooms in the fridge and my new favorite ingredient “Kale” and the only think I could think was “Fried Rice” with Kale and Mushroom. So easy and simple and incredibly delicious to taste as well. A perfect recipe to say goodbye to a week that went on forever and ever, don’t you think? The ingredients I use in this dish are not measured, I add them depending on the amount of rice I have. So do use your judgement to add more or less.

Recipe (Serves 3 – 4, cooking time 15-20 minutes)

1 cup uncooked rice
400 gms Mushrooms thinly sliced
1 leek chopped (remove the stalk) you can use shallots or spring onions instead
2 stalks Kale
1 1/2 tbsp Soy sauce
1 tbsp sweet chilli sauce (depends on your taste)
1 clove of garlic thinly sliced
Salt to taste ( use this at your discretion as soy sauce is already salty)
2 tsp peanut oil
Cook the rice as per the packet instructions. I boil the rice in lots of water and drain the water once it is cooked. Keep aside.
Boil water in a pot. Chop the kale (throw away the hard stalks ) and put the kale in hot water for 2-3 minutes. Drain and keep aside.
Heat Peanut oil in a pan and add the Garlic and Leek and cook till translucent. Now add the Mushrooms and cook till the mushrooms are cooked.
Add the rice, soy sauce and chilli sauce and mix well. Add the Kale and cook on a medium flame for 2-3 minutes.
Add salt and adjust the seasoning only if needed. I usually never add extra Salt.
