I love vegetables and eat them almost everyday. One of my favorite vegetables is Suran or Elephant foot yam. It is such a weird name for a very unique vegetable that is recommended in Ayurveda. It is considered to be good for promoting digestion, relieves flatulence is very cooling and has restorative properties. A very humble, oddly shaped tuber that is packed with goodness and is very easy to make.
I usually don’t find fresh Yam in Sydney, but thankfully there is frozen Yam available in the Indian stores here. Because I really love to cook with it.
Here is a very simple recipe for you to try:
Recipe (Cooking time 30 minutes, serves 2 – 3)
3 cups peeled and chopped pieces of Suran, (Elephant foot yam)
1 large onion finely chopped
3 green chilies finely chopped
1 tsp freshly grated ginger
Salt to taste
1 tsp Turmeric powder
1 tsp Red chili powder
5 – 6 pieces of Kokum (Garcini Indica)
1 tsp vegetable oil
1 tsp mustard seeds
Pinch of Asafoetida
Boil the Suran in 6 cups of water till almost cooked. Drain and keep aside.
Heat oil in a pan and add the Mustard seeds, Asafoetida, Ginger and green chilies.
Add the onions and cook until translucent. Add the Turmeric powder and the Suran.
Mix well, cover and cook for 5-7 minutes.
Add Salt and Kokum and 1/2 cup warm water till the Suran is soft but still firm.
Serve hot with Rotis.
